6'-2", 191 lbs, 46 chest, 32 waist, 38 hips, 32 inseam. Distance swimming, below 60° water temp. What size? This or add 7mm shorts under my 3/2? The 3/2 has a stretched out crotch, enough that my body can't warm that area (pretty painful as you can imagine). The rest of the 3/2 is warm enough, barely, but works fine as summer comes on.

Usually at that water temp, we would recommend a semi dry suit, or a dry suit, if you would like to use a wetsuit, we would recommend to wear a dive skin under and use a 7mm wetsuit with a 3mm to 5mm vest. The 5mm wetsuit you reference may not be enough neoprene for the conditions you describe. Also, you probably need a 4XL, although you do not specify other dimensions such as waist and hip. This suit might be a very good choice. The two-part layering system should work well for arm movement, cold, flexibility etc, and 6.5mm is better than the 5mm. Great price, too.

You do not say how cold the water is, but nonetheless, 5mm is most likely going to be way too thick for running, and getting in and out of water. Here are some alternatives.
The 1mm full and 1mm long sleeve shorty are both made with MetaLite which is like Titanium, and provides warmth much like you'd get from a 2mm or even 3mm suit. The 3/2mm wetsuit is another possibility, in a full length wetsuit, again which will give you better mobility than a 5mm.

It would be difficult to assign and exact percentage to its flexibility. It's made of very flexible neoprene II throughout most of the suit, and has super-stretch materials in key areas like the arms, back and groin area. It's 5mm, so it may be a little thick for water skiing, depending of course where it is -- 55 - 60 degrees is what it's made for. It should not be a problem regarding your height, but we would need your other dimensions such as weight, chest, waist and hips to say for sure.

We recommend a size M for you in this suit. Triple glued and blind stitched seams are very effective in sealing water out, though not as effective as taping. Taping is also more expensive, but really, this is a very good suit for the money and will keep you warm. (No wetsuit is completely water-proof -- it's the thin layer of water trapped between you and the suit that keeps you warm.)

A 5mm full suit is a substantial wetsuit for colder water conditions. If you are surfing, or snorkeling, 55 degree to 60 degree water; if you are diving, at the upper degree of that range. For water temps 55 and below, you should consider a thicker gauge wetsuit, 6mm to 7mm.
All-in-all though, the wetsuit you reference should work in all but the coldest conditions, and is a great suit, especially for the price.
